1 tsp. vanilla
1 tsp. lemon juice
1 T grated lemon rind
2 1/2 c. flour
1 1/2 c. sugar
3/4 c poppy seeds
4 1/2 tsp baking soda

Heat oven to 350 deg. Grease a 10 inch bundt pan. Lightly beat two eggs. Add oil, evaporated milk, vanilla, lemon juice and lemon rind and beat well. Add remaining ingredients and blend until smooth. Pour into prepared pan. Bake about 35-45 minutes.
Lemon Glaze: Mix 1 1/2 cups confectioners sugar, 1 tsp. lemon extract, 2 tsp. grated lemon rind and 2-3 tablespoons water until a pourable glaze forms. Pour over cake while it finishes cooling.

It was wonderful to catch up on your blog. I am loving the quilt blocks for your daughter!
Your log cabin wallhanging is favorite block.
So glad to hear about your Dad. I prayed for him and will continue to pray for his wound to heal.
